Soup, Chicken and salty Beans
Camilla is taking her morning nap, Isabella is here making me all kinds of "foods" one of them is called "makingserts" and apparently I can tell by smelling it??? Every child is born with their personality and she is bossy, its the cutest thing right now but I'd better keep it in check, she stands beside me coaching me in everything I do "sweep faster and better, there is still more dirt there", "mix the beans more", "look at this huge mess (her toys of course) you'd better come and help clean it up, I still see things lying around", "did you take a shower, did you make sure to clean really well?" I don't consider myself a really bossy person, maybe I am and I don't notice. Its the funniest thing hearing her talk to her dad, who really does not like to be bossed around, she feels its her mission to make sure he is doing everything just right.
I feel like I cooked all day yesterday, and today I also have quite a list of things to cook. I make everything from scratch so it figures that I have to cook almost every day. I have those mason jars and I freeze my meals so I have variety but there always is something else to make. I made a batch of beans a few days ago, I put them in the crock pot with some meat bones and fry up onions and garlic and just leave them cooking all day, its easy and everyone likes them. Last time I made the mistake of putting a little bit too much salt in them, they didn't taste way too salty to me but yes a little more than I would have liked. I served them and my husband tells me the beans are too salty, and what could I do to fix them. I know everyone is supposed to embrace criticism and feedback, but I sure don't always like it, what ran through my head and eventually came out of my mouth was,"suck it up and eat it, it won't kill you, what happened to that famous story of the lady that served her husband burnt toast and he ate it without complaining, this is not that bad, I have to cook with Cami usually screaming by my legs so cut me some slack if they are salty." I was very offended, I shouldn't have been he made a comment and I could have been gracious about it but I wasn't, its so much easier to take criticism from someone you don't know. Anyway I had make another batch of beans yesterday and to mix with the other ones frankly I was tempted to put no salt in them and see if he liked that better, so dumb I know, I resisted the urge and the beans are fine now and I have 9 meals frozen instead of 5.
I made my cream of vegetable soup as well today. I found its the best way to get my kids to eat the veggies, and I can put all kinds of things in there and blend it up, I freeze them in mason jars and so I can keep them for a while, it doesn't last very long because I send them everyday to work with my husband especially now when its so cold. I don't care much for most of the boxed broths they sell, for me they are over-priced and taste like carrot juice and onion powder so what I found that works for me is I just put two or three organic chicken legs in my soup when I cook it and then remove them before I blend everything and so far it has worked very well. I usually put an onion, celery, carrots, broccoli, and spinach, I will sometimes put a potato in there if I'm making it mostly for the kids, so far they love it.
I also made the famous chicken today, I call it famous because I always make it, frankly I'm so bored of it but my husband likes and seems to not mind eating it all the time. I chop up an onion and some garlic and lay it on the bottom of a baking tray then I place the chicken legs or thighs on top, I squeeze about 3 or 4 oranges and one lemon into a pitcher and pour half of it over them and plenty of salt and some thyme, then I turn them over and do the same thing on the other side, I bake it at 390 F on a lower tray for 25 minutes then I turn them over and continue cooking for another 25-30 minutes till they are nicely browned. I complain sometimes that he doesn't want to try more exotic interesting things but then who am I kidding, honestly I barely have time to throw together the food as it is if he was expecting me to have a new novel dish every night we would have worse problems.
